About the Chef 

Fireplace Grill and Bar is celebrating in style its half century milestone in partnership with the legendary French Chef Jean-Marc Banzo who was awarded his first Michelin Star aged 26, then his second Michelin star at 32 holding this stellar recognition for 28 years. 

Chef Banzo is collaborating with our rising Chef Sebastian Reischer, an Austrian native, whose methodical approach and keen eye for detail have seduced more than a palate. 

Fireplace Grill and Bar invites you to discover the 2018 menu with a subtle wink to France’s Aix-en-Provence, and featuring freshly sourced ingredients to enjoy. 

For the occasion, the Chefs have introduced two menus, The connoisseur 5 course tasting menu “Fire” and a 7 course menu “Fireplace”, complemented by an exquisite optional wine pairing sensory experience from the 170 wines available. Our Head Sommelier Ashley Ziegler whose philosophy is “What grows together, goes together”

The restaurant’s theatrical open-kitchen with centre-mounted charcoal grills allows guests to watch the culinary team in action, while savouring the “a-la-carte” menu. Guests will enjoy locally sourced ingredients handpicked by our team including our Iberico lamb from Spain, Australian Wagyu rib eye, fresh fish from Tsukiji market in Tokyo, Maine lobster and Onagawa scallops.
